Favorite Waffles

I made these on Sunday for dinner. They are so yummy that it is hard to stop at just two because they are so light and fluffy that they melt in your mouth. I found this in my Betty Crocker's 40th Year Anniversary cookbook, 1991 edition.

Waffles
2 eggs
2 cup all-purpose flour
1/2 cup vegetable oil or margarine/butter melted (I use canola oil)
1 3/4 cups milk (I use skim or mixed powdered)
1 Tablespoon granulated or brown sugar (I use brown)
4 teaspoons baking powder
1 teaspoon salt (I leave out)

Heat waffle iron. Beat eggs with hand beater in medium bowl until fluffy. Beat in remaining ingredients just until smooth. Pour batter from cup or pitcher onto center of waffle iron. Bake about 5 minutes or until steaming stops. Remove carefully. makes 12 4 inch waffles.
